I just got an Orc Full Set and I was wondering if there is any way to unpack the set, so I can only use, for example, the Orc Gradients, or Orc Text (so each item packed appears as an individual item in the inventory).

In this case, you don't need to unpack,since it's a set.Remove the items you want by left clicking in the box left to the item.Then go to 'With selected' and choose the option 'Remove from set'.And then active them, clicking in 'Activate'.
