Hi, I'm running the pc version of toribash on XP and I haven't played in quite a long time, and the in-game interface seems to have changed in the time that I've been gone.

The welcome screen displays the title and just the letter "u" and the only way I can start playing is by pressing escape. Then it sends me into the default one-player mode, and if I press escape, I get the same screen as before but the only thing that's clickable is an arrow that brings me back to one player mode.

Is there a menu that has online play and options and all that other stuff available? How do I get to it?

You need to update your graphics driver.
