I know this is probably a stupid thing but, during singple I have been practicing running and when I play the replay it zooms out so I see both players. When Im in a replay is there a command to focus the camera on tori all the time instead of it zooming out to see them both?

You could try and use free-cam and just keep it focused on the Tori alone.

Free-cam can be used by hitting the #2 button.


Also, I would like to note:
You could also substitute the free-cam by just using the UKE camera, which shows the POV of the UKE but is locked onto the Tori. You can do this by pressing 4.
